In an attempt to find more recipes with eggplant since they grow in such abundance I came across this one and decided to give it a try since it is both gluten free and dairy free. This eggplant salad recipe with lentils is very easy and looks stunning on your table. It is supposed to be a side but I served it as dinner since it was filling and we often eat salads for dinner. You could add grilled chicken also marinated in the balsamic marinade.

Gluten Free Pizza Acorn Squash Recipe

Prepare a delicious and healthy dish that your whole family will enjoy. These Pizza Acorn Squash Recipe are amazing and gluten free.

Gluten Free Pizza Acorn Squash Recipe Ingredients

2 Acorn Squashes
1/2 lb of Browned Meat
1 cup of your choice of sauce I used mine (Spaghetti Sauce Recipe)
1 cup of Mozzarella Cheese

Place the cut and seeded acorn squash on a cookie sheet with a lip. I put 1 cup of water on the tray. This will keep the acorn squash moist.

I cook them for 30 minutes prior to adding the meat and sauce.

Then I leave the cheese out until 10 minutes before the squash is done. Then I put on the cheese to melt.

Cook at 350 degrees for one hour total.

Prepare a delicious side dish that will also impress your family and guests. This Oven Baked Eggplant Recipe is super delicious, you only need few ingredients and you’ll have a tasty side dish perfect for holidays or just to make dinner extra special.

Ingredients:

  • 2 Large egg plants
  • 3 eggs
  • Gluten Free Bread crumbs (Italian ones)
  • Jar of spaghetti sauce
  • Package of shredded cheese. I like the Italian mix

Directions:

You will need to peel the egg plants.

Then cut them in 1/4 in circles.

You will then place your eggs in one bowl

And place the bread crumbs in another one.

You will dip your eggplant in the egg.

And then place it in the bread crumb.

You will make sure it is coated and place it on a baking sheet. Bake for 7 minutes on each side at 350.

Then you will take it out of the oven and build a layered casserole in a baking dish.

I place a layer of coated egg plant then I put sauce on it and cheese. I repeated twice. I then cooked the eggplant casserole for 35 minutes.

I love  healthy stuffed peppers. The story behind this recipe is I was hired on my site www.madamedeals.com to come up with a recipe using Jimmy Dean sausage crumbles. I did. It is called healthy stuffed peppers . You can click on the blue link to see!  It was so good I headed back into the kitchen and created another easy to follow recipe.

This is what you will need to create this recipe:

Healthy Stuffed Bell Peppers

Salsa

garlic

rice and beans I used caribbean flavor

place pepper

Several peppers

Cilantro

Jimmy Dean Sausage Crumbles

You will need to cut the pepper and remove the seeds.

Then you will need to place the rice and bean in the bottom. I gave it several healthy scoops for my healthy stuffed bell peppers

Then you will add in some of the Salsa

A tiny bit of garlic. Then I cooked them in the oven at 400 for 20-25 minutes. I put water in the dish around 1/2 up the dish and placed them in the oven .

Finally I added the cheese and let that melt it took around 5 minutes. Then you eat them and they sure are awesome!
