I own two food blogs and the ugly truth is my knives were horrible. I mean horrible. When I cut something it just wouldn’t cut so it ended up having to grab a scissors to get it to look good for my recipes on www.thesassyslowcooker and on www.cookinginbliss.com. 1. The first thing to keep in mind is that it’s all about you. Your best friend, sister, father or cousin may have favorite knife that they love. This doesn’t mean that you will feel the same way about it. The knife you choose has to fit you. Pick up different knives, look at the handle, ask yourself how it feels in your hand? Is it too heavy or not heavy enough? Do you feel like you can control the knife or is the blade too long for you? Look for something that feels comfortable in your hand and is easy for you to handle.

2. Full Tang. No, it’s not the drink that the astronauts love, it’s the part of the blade that extends into the handle of the knife. Some don’t extend all the way through the handle. The ones that do are called full tang. This is what you should look for. It makes the knife sturdier, better balanced and it will last a lot longer.

3. There are mainly 2 types of knife blades that you will find. One is German Steel and the other is Japanese Steel. German Steel knives are strong and easy to sharpen. Japanese Steel knives have thinner blades with sharper angles. Again, the preference is yours. Go with something that feels right. If you are needing your knife for precise, delicate cutting such as for sushi making you may want to go with the Japanese Steel, however some people are fine making those same cuts with a German Steel knife. You may even like both and choose to buy one of each.

Knife preference is just that; a preference. It’s so important to find a knife that is made for you or you will end up not using it and looking for another. Knife shopping can be overwhelming when you aren’t sure what exactly you should be looking for, but once you know, it makes the whole process a lot simpler. It is the best all purpose knife I have every used it slices a tomato as well as hard cheese in seconds.
