Noodle Kugel Recipe
Kugel is a staple of Jewish cooking, it’s a sweet, rich, custardy casserole or pudding. Whenever I eat this it brings back such fond memories of childhood. What’s great about kugel is you can alter the recipe to make it savory or sweet, just add your other favorite toppings and ingredients. This sweet and fruity Noodle Kugel Recipe is my favorite.
Here’s how to make this Noodle Kugel Recipe
Ingredients:
- 6 cups cooked yolk-free wide egg noodles
- 1/2 cup cranberry raisins or dark cherries or other chopped dried fruit
- 3 eggs
- 1 cup fat-free cottage cheese or ricotta cheese
- 1 teaspoon cornstarch
- 1 teaspoon ground cinnamon
- 1/4 cup of brown sugar
- chex cereals
Boil the noodles according to the package. Once it’s cooked set it aside
Heat oven to 350ºF. Spray 13×9-inch (3-quart) glass baking dish with cooking spray.
Spoon half of the cooked noodles in the glass dish. Reserve half of them
Put cranberry raisins or dark cherries or other chopped dried fruit on your noodles.
Then in a bowl, blend all remaining ingredients.
Pour them over noodles in pan. Bake uncovered about 45 minutes or until light brown and center is set.
Put your Chex cereal and some brown sugar and cinnamon in a ziplock it. Shake and crumble the cereals.
Then for the last 15 minutes put the remaining noodles
Then top it with the cereal with brown sugar mixture and begin to cook.
