One Pot Chicken Recipe
It was ten years ago almost that this recipe walked through my door. It was in one of those pans that you just throw away. It was brought to my door as a friendly gesture. I had just had a baby and one of my friends Meigan had made me dinner. She warned me that this would be the best chicken I had ever eaten. I looked a the chicken it looked good enough but I wasn’t sure it was love at first site. I was tired and I was hungry but most importantly I was grateful that I had a friend who made me dinner and grabbed my son so I could have something called a shower. I took both with a new found appreciation. I have to say she was right. I asked her how she made this treat and she just laughed and said, “You are not going to believe this it takes five minutes to prepare.” This my friends was as sweet as a sound as my sleeping baby who only like to sleep for one hour and 42 minutes at a time.
One Pot Chicken Recipe
Ingredients:
One pot or roasting pan
Two large Sweet potatoes
One large onion
Three or four tomatoes
1/4 stick of butter
and I add the garlic my husband is Italian nothing in our house is without garlic 🙂
Directions:
Wash the chicken not with soap. Just run it through some water and pat it dry with a paper towel.
Place it in the pot with the breast sticking up
Place the butter on the the top of the skin with a brush
Wash the sweet potato
Then puncture it with a fork
Finally cut the onion in half than quarter
Now place everything in the pan
Set the oven for 350 degrees and cook until the internal temperature is 165 degree. It usually takes about 2 hours.

Long-time reader, first-time commenter – This recipe is brilliant! I’ve made it 4 times now with a few different variations each time (e.g. substituting the tofu for pork or chicken) and every time it’s turned out beautifully. It’s almost as good as my local ramen place. Thanks for this! It’s getting me through the long winter.

Thank you for sharing. I would love to eliminate grains as well. Did you take out potatoes as well? Ok, what do you eat the squash with or drizzle on top? Loving it.
