Greek Lemon Chicken Soup Recipe
Nothing beats a warm bowl of delicious chicken soup to comfort you after a tiring day. This Greek Lemon Chicken Soup Recipe adds a nice twist to our old-fashioned favorite soup. It’s so easy to prepare and everyone in the family will surely love and add it to their list of favorite comfort food.
Greek Lemon Chicken Soup Recipe
Ingredients:
1 small rotisserie chicken (about 3½ pounds) cut into 8 parts
1 cup of carrot shredded
1 red onion, quartered
2 stalks celery, sliced into thirds
1 cup of water
2 teaspoons kosher salt
8 cups broth
3 large eggs
3 tablespoons lemon juice (from 1½ or 2 lemons)
3½ cups cooked rice
Salt and pepper, to taste
Instructions:
- Put the chicken, carrot, onion, celery, pepper and salt in a large Dutch oven or stock pot. Add broth. Bring to a boil. Lower to a gentle simmer and cook uncovered. I cook it for about 20 minutes.
- Then you will strain the broth from the veggies you are only using them to flavor the broth not to eat in this recipe. You can then blend them and put them in ice cube trays to add flavor to a sauce or use for baby food without the onion
- Then you will whisk the eggs and lemon juice in a small bowl until fully mixed. While whisking, slowly pour one cup of hot broth into the egg-lemon mixture. Then you will need to pour egg-lemon-soup mixture into the heated pot of broth while whisking to combine. Reheat gently but don’t allow the soup to boil or the eggs will curdle.
- Cut or Shred or cut the Rotisserie chicken chicken into bite-sized pieces and set aside.
- Scoop ½ to ¾ cup of hot rice into the bottom of each soup bowl. Add some shredded Rotisserie chicken. Pour in 1 to 1½ cups of broth. Season, to taste, with salt and fresh ground pepper. Garnish with a lemon slice
- Note you can skip the making of homemade broth by combining 4 cups of vegetable broth with 4 cups of chicken broth. You can use lemon juice found in the bottle instead of fresh lemon juice
This is a an easy recipe to make. It freezes really well so make two or three batches and put them in gallon freezer bags or Quart bags for a quick lunch.
