Lobster Cakes
I love lobster. When I came across this recipe for lobster cakes well. I had to try. I am a budget minding girl and having a budget doesn’t lend itself to full lobsters often but buying one lobster and making it into a meal for four well that my friends is living the good life on a budget.
This is how I make these… The first thing you have to do is cook the lobster. I like mine steamed it taste better and it makes less of a mess. We all know I like less of a mess!
Directions for Steamed Lobsters
To steam live lobster and if you lobster is dead you can still steam it! Fill pot about three inches two inches. I put in a Tablespoon of sea salt. Bring the water to a boil, and then put in lobsters head first diver right in. You want to add them one at a time but in our case we just need one.
Steam a lobster for 8 minutes per pound, for the first pound. Add 3 minutes per pound for each additional pound thereafter. See chart below for approximate cooking times. Regulate the heat if the froth starts to bubble over.
Lobsters are done when the outer shell is bright red and when the meat is white, not opaque. Again, DO NOT overcook your lobsters. Carefully remove lobsters from the pot with tongs. Be careful, they are very hot. Note: Your lobsters will continue to cook a little after you take them out of the pot. To stop the cooking process, place your steamed lobsters in a bowl of ice before cracking. Now you just wait for theme to cool off a little. Then you want to remove all the lobster from the lobster’s body.
You will take a
1 c. fine unseasoned bread crumbs
1/2 c. finely chopped onion
3 tbsp. finely chopped parsley
1/2 c. milk
1 egg, lightly beaten
1 1/2 tsp. Worcestershire sauce
1 1/2 tsp. lemon juice
1/2 stick of butter
You will combine lobster, crumbs, onion, red peppers, 1/2 tsp of garlic and parsley in a medium-size bowl. Stir in milk, egg, Worcestershire and lemon juice; mix well.Shape into 8 patties, adding additional bread crumbs if mixture is too moist. Pan fry in butter in large skillet; cook 2 minutes on each side or until they are golden brown in color. You can plate them on greens to enhance their color. I serve mine with lemon. I will say my husband adds a little hot sauce.
